'Marbleizing' Chocolate Bark

My first step in achieving a marbled look on the chocolate bark was to melt the dark and semi-sweet chocolate together in a bowl over a simmering pot of water. As they were melting, I poured white chocolate chips into a microwave save bowl and microwaved it in 15 second intervals, stirring after each interval. The reason for this is white chocolate burns very easily. I continued this until the white chocolate was melted.


Once the dark chocolate was completely melted, I poured it onto a sheet pan lined with parchment paper and using an offset spatula, I spread it to my desired thickness. Next, I placed a fork inside the melted white chocolate and dripped it on top of the dark chocolate.


Next, I took a toothpick and placed it in the white chocolate and dragged it in different directions thus creating the marbleized look. See the pictures below. When I was happy with the overall appearance, I added small cookie cutters that I dipped in a baking release agent (in this case Ghee in a spray bottle) and pressed them into the chocolate gently. I added chopped pistachios and then refrigerate for at least an hour, allowing the chocolates to set.
