A Note Before You Start
The star of this recipe is the Russian Dressing, so I recommend making your own as opposed to store bought bottles.
Ingredients
Ingredients for the Sandwich:
4 slices of rye bread
2 TBSP of softened butter + 1 tsp for frying
¼ cup Russian Dressing (recipe to follow)
6 slices of Swiss cheese (3 per sandwich)
½ lb of corned beef
½ cup of sauerkraut
Ingredients for the Russian Dressing:
½ cup of mayonnaise
3 TBSP of ketchup
2 TBSP horseradish
2 tsp of Worcestershire sauce
1 tsp sugar
¼ tsp of paprika
⅛ tsp of salt
Freshly ground pepper to taste
Optional: 1 TBSP of relish (not in the original recipe)
Preparation
Step 1: Butter one side of each slice of bread. Turn the bread over and spread 2 tsp of Russian dressing on each slice. Top with 2 slices of Swiss cheese.
Step 2: Divide the corned beef and sauerkraut in half, placing one half atop the Swiss cheese starting with the corned beef, then the sauerkraut. Repeat for the second sandwich. Place the remaining slice of cheese on top of the sauerkraut layer and top with the remaining bread slice for both sandwiches.
Step 3: Melt the remaining tsp of butter in a medium size saute pan on medium heat. Place the sandwiches in the skillet and fry just long enough for the cheese to melt. Serve immediately with extra Russian dressing for dipping.*
*If you’re not serving these immediately, they can be warmed up in a preheated oven of 300 degrees on a parchment lined baking sheet pan for 10 minutes.
