Watermelon Vinaigrette

A Note Before You Start

This salad dressing has a unique blend of ingredients and is one of our favorite summertime condiments!

Ingredients


1&½ cups of seeded and cubed watermelon

1&½ cups of sliced strawberries

2 TBSP of champagne vinegar*

1 TBSP of honey mustard

1 TBSP of honey**

1 TBSP of diced shallot

1 tsp of grated lemon zest

¼ tsp of salt

2 TBSP of light olive oil***

Preparation

Step 1

Use a blender that has a removable portion of the top.  If you do not have one, you can make this in a food processor.  Combine the first eight ingredients in a blender and puree until smooth. Remove the top portion of the blender top and with the blender running, slowly pour in the oil in a thin stream.  This will emulsify the vinaigrette. 


Step 2

Chill before serving.  This makes a little over 2 cups.



*If you do not have champagne vinegar, you can use whatever vinegar you have on hand.


** A little kitchen hack:  If you happen to have olive oil in a spray can, you can spray a little on your tablespoon measure, so when you measure out your honey, it will completely slide off the measuring spoon.  If not, measure out your oil  with the measuring spoon before you measure your honey, and set it aside in a small ramekin to drizzle in the blender as your last step.  The residual oil left on the spoon will make the honey slide right off!
